Fingers fish batter with curry

Here I am again, talking about curry . Will I be obsessed? I do not care, it's delicious, and this one I prepared, for some fish fingers , was an outrage.

I used the basic curry recipe that I explained in other posts, but with a new ingredient. A powerful touch that completely changed the flavor of the dish. An herb that is taken as an infusion, famous for its medicinal properties: the malojillo, or lemongrass .

This plant is a gastronomic delight. In another post I tell you.

Recipe fish fingers with curry

  • 1 medium onion
  • 1 large tomato
  • 1 large garlic clove
  • 1 piece of ginger about the same weight as the garlic clove
  • 1 teaspoon of concentrated tomato paste
  • 3 tablespoons of coconut milk
  • 1 sheet of malojillo, or lemongrass (lemongrass in English)
  • A spoonful of curry powder that they sell in supermarkets
  • A ground cardamom seed
  • A pinch of cinnamon
  • A pinch of paprika
  • A pinch of ground cumin
  • Pepper
  • Salt

The ingredients for the battered fish:

  • 2 fillets of hake (can be any whitefish )
  • 1 egg
  • wheat flour
  • cassava flour (optional)

Curry preparation

Chop the onion, tomato, garlic and ginger and sauté in a pan. Add all the spices and the sheet of malojillo (lemon herba), a pinch of salt and a little pepper to taste.

After 2 minutes add half a cup of water and a teaspoon of tomato paste. Lower the heat and let it cook for 15 minutes.

Then you will pass the whole stew, except the malojillo sheet, to the blender. If necessary, add more water. Blend until a sauce is done.

This sauce is passed through the pan again and you put the sheet of maquilillo again. Cook for 10 minutes more, over low heat.

After this time, you add coconut milk, and turn off.

Preparation of battered fish

Very easy. Chop the fish fillets into fingers about 5-6 centimeters long, add salt and pass through a layer of cassava flour.

Then you will pass each finger through an egg mixture with wheat flour. From there you take them directly to a pan with hot oil.

Once they are golden brown on all sides, put them on a plate with a sheet of absorbent paper.

Serve a plate with rice , with mashed potatoes or fried potatoes, on top of the fingers of battered fish and bathe all this with the curry sauce.
